Mini Oat Muffins with Blackberries

Prepare these little oat muffins full of great flavor!

Ingredients

2 eggs

120 g brown sugar

80 ml sunflower oil

125 ml whipping cream

125 ml milk

1 tsp vanilla extract

100 g flour

120 g wholemeal flour

100 g ground oats

2 teaspoon baking powder

1 pinch of salt

40 g butter

150 g fresh blackberries or raspberries

35 g oats

Recipe Steps
Step 1

In a bowl, beat the eggs with the sugar and oil until light and frothy.

Step 2

Add the milk and cream, vanilla, flour with the baking powder, ground oats and a pinch of salt and continue beating with an electric whisk for 2 more minutes. Then, add the melted butter and mix again.

Step 3

Fill the cups of the mold and add the blackberries and oat flakes. Bake in the oven, preheated to 180 °C, for 20-25 minutes until the muffins have risen and are firm to the touch. Remove from the oven and allow to cool. *For best results, grease or flour the pan at the beginning of the preparation.
