Caramel, Mango and Coconut Muffins

Ingredients

60 g white sugar

1 egg

40 ml sunflower oil

60 ml whipping cream

70 ml milk

20 g butter, melted

1 tsp vanilla extract

160 g flour (you can substitute half with wholemeal flour)

30 dehydrated ground coconut

1 tsp baking powder

1 pinch of salt

20 g dried coconut shavings

120 g fresh mango pulp

3 toffee candies

Recipe Steps
Step 1

In a bowl, beat the egg with the sugar and oil until light and frothy.

Step 2

Add the milk and cream, vanilla, flour, baking powder, ground coconut, and a pinch of salt and continue beating with an electric whisk for 2 more minutes. Add the melted butter and mix again.

Step 3

Fill the cups of the mold and add some diced mango and chopped candies. Bake in the oven, preheated to 180 °C, for 20-25 minutes until the muffins have risen and are firm to the touch. Finally, remove from the oven and allow to cool. Finish with diced mango and coconut shavings. *For best results, grease or flour the pan at the beginning of the preparation.
